I'm a new grower and noticed on some of my germinated seedlings, the 2 cot leaves are curled, where others are perfectly open---do I need to worry about those curled leaves, or is it not an issue and the plant will grow fine?

The Cots merely provide nutrients and chorophyl production to get the seedling going and will eventually dry up and wither away so they don't really effect the long term growth of the plant as long as the true leaves show up you'll be fine!
