Thats interesting, I don't think I have ever split one before. Like you said, Maybe they are like field pumpkins and need multiple fruit. I don't know why they would be splitting other than that you are pushing them hard and they are really growing fast! Which I would think is a good thing.

The cool night temps here probably interfere with the assimilation of certain nutrients and/ or those nutrients are lacking.
Every time they split it was after leaving the plants more or less alone, it wasnt linked to an application of water or fertilizer as far as I can tell. The last one split after I culled a gourd nearby. Leaving the other gourd may have helped.

Maybe removing the blossom half of a fruit, then the stem half rather than cutting halfway through a stem X 2, is an alternative to be tried. eg
