They are really good eating and are great for salsa. Yes you can lose a third to the cat facing and the core (which can be stringy and mealy) but you can pretty easily get two pounds of delicious and fine textured tomato from a three pound tomato!
You might be surprised how fast that amount of fresh salsa will get eaten though.
I could be wrong but tomatoes cantaloupes and peppers are probably the best giant veggies for culinary use.

I have a cousin that keeps razzing me about my tomato being ugly.
I tell him it is the prettiest 8.355# tomato I have ever seen, ha!
Anyhow, the beauty is in the number on the scale.
