So, how many days does a giant tomato grow? Not the plant, but the actual tomato? Any info is greatly appreciated!

Has anyone actually kept track of Degree Day requirements for these babies? It's been known for over 60 years that this is the main determining factor in maturation for most crops, but there is a great variation in requirements among the thousands of tomato varieties

The exact day of pollination is just a guesstimate. When dealing with a megabloom each part of that flower may pollinate in different days. In general 40-50 days depending on several factors including temperature and variety. In the cool Fall they can continue to slowly grow and linger on the plant for over 60 days.
