I'm new to growing giants and I take it these plants can soak up a ton of water but how often and how much should they be watered?

In warm and hot weather you can water heavily and more than once a day as long as your soil drains well.

I have clay soil and after watering it stays moist an inch down for like 3 days to a week.

You may need to build yourself a raised bed or add some amendments to help your drainage if your clay holds water that much. A bunch of organic matter added to your plot might help a lot in drainage and soil fertility.

yes, you don't want them to dry out, especally in the heat, but soggy isn't good either.

That is a good idea. I add horse manure any time I get a chance and my soil has undergone a transformation from clay to excellent soil.
