Do I need to pinch of male flowers of I have a pollinated female. Or should I just pinch off the females???

Just pinch off the females, and you won't have any more pumpkin's setting. I have heard of growers pinching off all flowers (Male and female) before a spray application to protect the bees. Which is always a good thing. A lot of work too.
