how do you know if the fruit has set? I pollinated 4 days ago and the fruit has only doubled in size. Also how much do you water a day once the fruit is set(my plant is 400 square foot). Any advice is appreciated

my experience is that if the fruit has doubled in size then pollination occured

If its still nice and shiny you are probably good, although they can abort up to basketball size or bigger.
