Aside from sprouting some seeds as a test, how do you know if the seeds from your pumpkin are viable?

The only real way to know is to sprout a few seeds and see. Of course, each seed is different. But you can drop seeds on a table, one at a time, and "listen" to what you hear. There is a differnce between a higher pitched hollow sound (bad seed) and a thunk sound of a potentially good seed.

The only valid test is to run a germination trial. We do it with grass, vegetable & flower seeds. States require testing every 6-18 months by law. Here in CT, that dusty bag of grass seed in Home Depot with the 10 month old seed tag is illegal. AGs are vegetables according to most state agencies. We all know they are technically fruit but the test protocol is the same.
