My plant has yellowish leaf edges, but gets bigger everyday. Does that mean things are fine?

Are you talking about the cot leaves? If so don't panic, those seed leaves can do crazy things. Watch for your first true leaf, if that turns out looking good you should be ok.

every year there are tons of posts about this, 99.999999% of the time it is fine, usually because of the soil being too cool, hard to believe in FL. though. You will be fine

The cot leaves are nearly rotten. I guess, I'm being real nitpicky, because it is my first one, so everything catches my attention. The nights have been fairly cool since planting, so that might be it. Since planting, the plants have grown bigger, the cot leaves have shriveled, other leaves have become a touch less green (even slight yellowing), and stiffer to the touch.

They are in pots they are under stress..or being over watered..
