Subject: Turning Orange. What to do?

My two generic fruits are starting to develope a light shade of orange while my AG's are still avery pale yellow. Does this mean the generics are done growing, or can I keep them on the vine longer. If I have to axe them, would storing them in my garage work. My garage stays very cool on those hot summer days. The walls are 13" thick Packed full of insulation. Does the opposite in the winter? Enough about my garage, could I store them in there if I had to pick 'em?
