Subject: FLAT / Pancake shaped?

What causes them to be Pancakes sometimes?
I know that long and low is ussually a good shape, but not pancake low.
So, is this an issue with the soil? Selected the wrong fruit to cull and let grow? Too much/ Too little of a certain nutrient?
Or just a genetic trait, you get or don't get depending on genes?

I think it's in the genes. We had one start as a pancake last year but it rose up, got taller & finished well anyway.
I'll take a pancake over a wheel.
