Is it possible to turn the main vine the opposite way..I have seen the pictures of staking the vine,but this one needs to go completely opposite???

had to do a 180 on one of plants this year.
just take it slow and move a few inches everyday.
since you live in hot climate should be easy to do just wait till the vine warms up mid-day on should do the trick.just dont try to correct all at once.

I also have a plant that needs to go nearly 180. I have some bamboo stakes. Do I just put them up against the side of the vine nudging in the new direction every new 6"-12" of growth until it is going the right way?

that will work. just be careful when moving the vine.
