Got a couple of questions..I have some atlantic Giant plants growing.Can or is it best to trim /cut off excess vines to leave just two pumpkins growing per plant? Or do you pick of excess fruit and bury the vines when you pick off excess fruit/flowers?

If you are looking strictly for size , I would go with your best.(all you eggs are in one basket then)
Personally ,I think if the leaves are already grown they will help feed the pumpkin . Start dead ending the vines so no more side vines grow . A lot of people leave the main vine growing.

ok this might sound foolish but how do you dead end a vine? Just cut off end?what about other flowers on the vines?

Dead end is to remove the growing tip of a vine , then after a few days most people bury the tip,just a light covering of soil is enough.
Removing unneeded flowers should be done anytime you use a systemic insecticide so you dont poison bees, its much easier if you do this during vine burying but can be done anytime.
Removing the flowers helps to put more energy to the plant, by not wasting the energy needed to produce a flower thats not needed.
I wouldnt worry about extra flowers unless you can remove them without doing damage to the plant and roots
