Whats the difference between granular vs water soluble? Is one better ? I saw Tremor's post that "19-19-19 is the highest analysis granular material that can be made." Thanks

For many people it is a lot easier to properly apply solubles than granular. Consider this:
The cold planting mound usually needs a little soluble Nitrogen to speed up the vining while waiting for organic manures to release at the hands of our friendly neighborhood soil bacteria.
Ask a tenured grower what to use. Most will say something like "a couple handfuls of Urea". Uh-huh....what the heck does that mean? What it means is that quite a few Newbs every year will have several weeks of Nitrogen related fruit aborts while waiting for the Nitrogen feast to subside.
But doling out a Tablespoon of soluble 30-10-10 in a gallon of water isn't very hard to get precisely measured & applied. And this is all most growers need to get their vines running if their soil is decent.
Have you ever tried applying 2.4 ounces of prilled Urea to a 30 foot square planting mound? This might sound easy enough until we consider that with a typical SGN 240 prilled Urea, we need to apply only 14 PARTICLES PER SQUARE FOOT. That is the equivalent of 100 lbs of Nitrogen per acre! A "couple handfuls of Urea" probably weighs 6 ounces. That's enough to treat an entire 600 sq ft planting area for folks with a high Organic Matter soil.
However a single Tablespoon of soluble 30-10-10 applied in water to the same 30 square foot planting mound on May 15th shouldn't dash anyone's fruit set goals.
Everything is relative to the condition pof the soil, the experience of the grower & the time of year.
